Ingredients
  

  • 5 cups, rinsed Boysenberries
  • 1 Pie dough
  • 1/2-3/4 cup Sugar
  • Pinch nutmeg
  • 1 tsp Lemon juice
  • 1 Egg, beaten
  • 3 tbs Instant tapioca

Instructions
 

  • At first, take microwave proof medium mixing bowl and fill it by mixing up sugar, berries, lemon juice, tapioca and nutmeg. Mix them all in gradual manner to coat berries with added sugar. Allow sugar to mix up with berries for about 20 minutes.
  • Initiate microwave dessert making by taking baking pie pan being microwave safe (Preferably having diameter of 12 inch) and completely grease it up using cooking spray.
  • Now take up pie dough and roll it nicely into 12 inch diameter on hard surface. Then line the dough on pie pan. Put the pan into refrigerator to chill.
  • Now roll the second pie dough. Take out chilled pan and place prepared berry mixture on it. On top, place second pie dough. Make air vents and trim edges.
  • Beat the eggs and brush it on top of dough.
  • Then allow it to gradually microwave at HIGH for the next 25 minutes. Reduce the temperature to medium and continue to microwave for next 25 minutes.
  • Allow the pie to turn brown. Take out and allow few minutes for the lovely dessert to cool down. Enjoy the pie!!
